This creamy and delicious dessert is very simple to make, and it’s a healthful alternative to sugary desserts. By using very ripe bananas (i.e. the banana skin is nearly black), all of the sweetness in this dessert comes from the natural sugar in the bananas. Vanilla extract enhances the banana flavor, and the chia seeds adds a crunchiness to the texture (not to mention the additional nutrition these little black seeds bring).
- 4 ripe bananas
- 3/4 cup coconut milk
- 1/2 cup chia seeds
- 1 tbsp vanilla extract
- Add the bananas, coconut milk, and vanilla extract to a blender or food processor and combine until smooth.
- Add the chia seeds and pulse to evenly combine.
- Refrigerate for at least 1 hour before serving.
